Goofing off with cousins...

We received our "Disney-Coco" book from Stephanie yesterday :) Sarah is reading it in this video. Isaac is doing a "trick" and Savannah must be his assistant...LOL
My sisters three girls and my three boys are really close...They have always lived close to each and are together almost every day and are almost like brother/sister..fight like it sometimes also..lol Thankful for loving family...They would do anything for each other.

Sunday

 Glad to have finished canning the last of the corn this weekend.. I also put several bags of corn on the cob in the freezer and left a few in the garden to eat on this week.
  Jacob made blueberry whole wheat pancakes and bacon for breakfast Saturday morning :)
Also glad that the pool is finally up...now we just need to bring the deck on out to meet the pool and add smooth pebbles around the outside edge of the pool.

With all this canning some household chores need caught up..lol-I really need to get in the laundry room..

Still have some tomatoes left to can and peppers to freeze, but the harvesting is almost over..We will dig potatoes at the end of September. I hope to get the house pressure washed/outside doors/window trim painted and the decks restained*And a small retaining wall built along the edge of the parking on our driveway.We will start back to school next week also.

Our Endo visit this week.

 They decided they would take some pictures and got some wild ideas..

I like to take the pictures..not be in them..LOL
 Especially when the pictures turn out like this..
 Boy..this looks terrible..I really shouldn't even post this it is so ugly..... LOL
Atleast they had a little fun waiting!
 Isaac's room this time was decorated with lots of wilderness animals..A plus...Passed  more time looking at the border with all the animals...many of them he hunts..(deer,coyote,rabbit,bear and so on.)

CPNP, Diabetes nurse, nutritionist, phlebotomist....etc...
 We stopped on the way down to Knoxville at Bass Pro shops and picked up the boys a few shirts. Isaac went ahead and put his on... it was a little large.. :)
OK..Can we get out of here now!!!

Overall they said everything looked really good...
His AIC was 6.9%  :)
Thankful for a good/safe trip.

 Oh yes we did..

 After several hours at a very hot football practice and scrimmage an ice cream cone sounded like a good idea..

I swagged the ice cream...no carb count at the local owned shop... :) How many carbs would you guess? A little bit of the ice cream is already missing in the picture.
 
I guessed 55gC. We will see how I did in a little while...Looked like about 1 and a half cups of soft serve plus the cone...
 Abram had the choc./vanilla swirl. Abram and Isaac had football practice earlier.
 Jacob also had chocolate.
 He received a few bumps/bruises at his football scrimage. 2 other players went to the hospital.. One for stitches and the other for an ACL tear.
I decided on chocolate also..


UPDATE: The past three hours Isaac's bg hasn't went over 105...so I must have guessed close...plus the exercise helped out I'm sure.. Whatever it is ..I will take it and be glad of it...  :)

Canning Salsa



Dice up 5 cups of bell peppers.

 Dice up 5 cups of onion.
 I put my tomatoes it hot water for a few minutes until the skin splits then I remove them and let them cool and peel the skins from them. (Ten cups of peeled/diced tomatoes)
 I also add 1 1/4 cups of apple cider vinegar, 3 tsp. salt, 2 Tblsp. of cilantro, 2 hot peppers,(u can add none or up to 2 cups..depends on your taste. lol),1 Tblsp. of hot sauce, 2 Tblsp. of sweetner and a bit of garlic. Bring this to a boil-then place into canning jars.

I process mine on ten pounds of pressure for 15 minutes.

 For salsa/pickles I reuse glass jars from other foods. It works fine.
Taste pretty good.

More corn that I gathered and have been canning also.
(around 100 jars so far)

I enjoy canning/putting up the food that we have grown. :)  It gets BUSY during peak harvest time, but so worth it.

First canning of corn (this year-lol)

 We picked about a small amount of our corn and shucked it.
 I then wash the corn and remove all the "silk".
 After that I cut the corn off the cob. (My camera reset itself with a crazy date again.)
 I feed the cob to local wildlife or goats/hogs/cows when we have them.
 Then you place/pack corn into jars and add salt. If you are using a pint jar you add 1/2 tsp. if you are canning in quarts you use 1tsp. Then fill the jars with water.
 Add rings/lids onto jars and place into your canner. I add two quarts of water into the bottom of the canner and put the lid on..wait until steam is coming out of the top hole really well and place the "jiggler" on ten pounds of pressure and process for 35 minutes.( I start the stove on high and gradually have it turned down to medium by the time it is ready to turn off.)
Monday night and Tuesday I worked up the corn and canned 40 jars..We still have lots of corn to harvest..It did really well this year. I leave the jars on my table for 24 hours and then I remove the rings and wash the jars and place them onto shelves in my laundry room.
I am so thankful for this bountiful harvest and for the health to be able to do something with it :)

Football injuries/ Winning a giveaway

Last week football practice ended with Abram having a broke finger and Isaac having a torn patellar ligament..(result of stepping into a HOLE -while running routes in the field-not being hit! They need a better practice field...) Jacob hasn't been injured..yet... We get results back today from an x-ray taken over the weekend to see if Isaac has a complete tear/broken kneecap. His bg's are running HIGHER. Guess it's from the injury...hormones being released, etc. Plus he's can't be as active as usual and I think he is also starting to come out of the honeymoon phase...I gave him 3 corrections yesterday, also thought about raising his basal. We will see what today brings.

Guess I will be heading to the garden to gather some corn, tomatoes, cabbage, peppers, cucumbers and blackberries.
